Cool & Spicy Beef with Lumache
Ingredients:
• 200g Hana Lumache.
• 1 tablespoon olive oil.
• 500g minced beef.
• 1 teaspoon ground coriander.
• 1 teaspoon ground cumin.
• ½ teaspoon ground cardamom.
• ½ teaspoon garam masala.
• 1 large red capsicum.
• 150g snow peas, chopped.
• 5 green onions, chopped.
• 2 teaspoons chopped fresh coriander.
• ¾ cup dates, sliced.
Ingredients of the Dressing:
• 2 tablespoons light
soy sauce.
• ¼ cup dry sherry 1 tablespoon mirin.
• 2 teaspoon sugar.
• 2 teaspoons sesame oil.
• 2 teaspoons grated fresh ginger.
Instruction:
• Cook Hana Lumache
in large pan of boiling water, uncovered, until just
tender; drain.
• Heat oil in pan; cook beef and ground spices,
stirring, until beef is well browned and tender.
Cool.
• Quarter capsicum, remove and discard seeds and
membranes.
• Roast under grill or in very hot oven, skin-side
up until skin blisters and blackens.
• Cover capsicum pieces in plastic or paper for
5 minutes, peel away skin.
• Chop capsicum pieces.
• Combine mince mixture, capsicum, snow peas,
green onion and Hana Lumache in bowl;
cover, refrigerate.
• Just before serving, stir in fresh coriander,
date and dressing; mix well.
• To make Dressing combine all ingredients in
jar; shake well.

Lumache with red
Capsicum and Chilli Sauce
Ingredient:
• 500g Hana Lumache.
• 2 tablespoons grated Parmesan cheese.
• 2 medium red capsicums.
• ¼ cup drained chopped sun-dried tomatoes.
• 1 small fresh red Chilli, chopped.
• 2 cloves garlic, crushed.
• 1 teaspoon chopped fresh thyme.
• 1 tablespoon tomato paste.
• ¼ cup olive oil.
• ½ teaspoon cracked black peppercorns.
Instruction:
• Cook Hana Lumache
in large pan of boiling water, uncovered, until just
tender; drain.
• Keep warm.
• Add sauce to Hana Lumache, sprinkle with cheese.
• To make Red Capsicum and Chilli Sauce quarter
capsicums remove and discard seeds and
membranes.
• Roast under grill or in very hot oven, skin-side
up, until skin blisters and blackens.
• Cover capsicum pieces in plastic or paper for
5 minutes, peel away skin, chop capsicum
pieces roughly.
• Blend or process capsicum with tomato, Chilli,
garlic, thyme, paste, oil and peppercorns
until Smooth.
